IN RESPONSE TO ALL THE PEOPLE WHO HAS NO IDEA WHAT SOUS VIDE IS:
1) it is not a stupid way to cook
2) it is arguably overpriced, but you have to consider the inclusion of a circulation system to make the whole process completely hands free and automatic. Also much more energy efficient as it regulate modulation of the heating coils.
as for the cooking itself: YES BOILED STEAK IS LAME, but this is not it:
This technique of cooking is called sous vide. The idea is to cook meat at just sufficient of a temperature where the protein structure will begin to break down, but not high enough for the meat to “overcook” or for the tendons to toughen up.
Temperature is the key here. Since temperature will eventually reach equilibrium, the timing is actually not that big of a factor. Usually, a sous vide chef will blow torch the meat after it is cooked through the vacuum bag. This will caramelize the herbs and sugar through what is known as the Maillard reaction.
What you end up with is a surprisingly tender steak with almost all the juices still locked inside the cell membrane (since it is cooked so gently) but with a tasty, grill finish on the outside. It is quite the experience with steak, pulled pork, etc etc.
So you guys hired more people/got interns so you could cover more of CES and make more videos but at the cost of making more bad videos than good videos? Not hating, just saying that whoever decided this was a good idea should rethink their strategy for next year.
