You should checkout mycroft for an privacy focused home-assistant.
I personally go the route of a seperate wifi network for sensors, and stuff that I’m not to worried about. A wired network for critcal stuff. With neither touching the internet. Then a normal home network for my computers and not smart home stuff.

I would use a PLC with a bunch of relays and switches, a Raspberry with Node-Red installed and maybe Home-Assistant to connect with Virtual Assistants! Already made a project in high school that won the 3rd place in a contest!!!
